The House of Sablière
Sablière was founded in 2024 by Lucy Isles and Kim Wilson as an independent cuvérie dedicated to composing fine 0.0% sparkling cuvées. Each expression is conceived, built, and refined in-house, with precision and care.
Named for Madame de la Sablière, whose Paris salons brought together artists, thinkers, and scientists. The House exists for the same purpose: to create space for conversation, culture, and a new ritual of gathering.
The House Standard
Natural. Elevated. Enduring.
Sablière is built from first principles — in composition, sourcing and design. The House follows a single discipline: everything must be natural, elevated and made to endure. Flavour, process and impact are considered together, never in isolation.
Materials are chosen with care; packaging is formed from reused board, bearing the imprints of bottles it previously carried. Lightweight glass, thoughtful ingredient selection and circular design are embedded from the outset. Luxury and sustainability are not in tension here — they coexist.
