Where mastery meets mischief
Sablière was created to bring artistry, feeling and connection to 0.0%. To expand what is possible – not by removing, replacing or imitating, but by creating from the ground up, with all the ambition and beauty of the world’s finest wines.
Instead of making wine and taking the alcohol away, we brought together tea, apple, honey and verjus and asked what each could contribute. Working with winemakers, tea makers, sommeliers and scientists around the world, we developed our own approach to composition: Méthode Sablé. Today, each cuvée is composed at our cuverie in Edinburgh as its own creation.
The House takes its name from Madame de la Sablière, a 17th-century philosopher and salon hostess whose Paris salon brought together writers, artists, scientists and thinkers – people from different worlds, connected through conversation and curiosity. Sablière carries that spirit forward.

Sablière is built from first principles – in composition, sourcing and design. The House follows a single discipline: everything must be natural, elevated and made to endure. Flavour, process and impact are considered together, never in isolation.
Materials are chosen with care; packaging is formed from reused board, bearing the imprints of bottles it previously carried. Lightweight glass, thoughtful ingredient selection and circular design are embedded from the outset. Luxury and sustainability are not in tension here – they coexist.
