Cuvée Sablé is a new category of 0.0%. Instead of starting with wine and removing the alcohol, every Cuvée Sablé is created from first principles using our proprietary Méthode Sablé.
A fine 0.0% sparkling cuvée is the first expression of Cuvée Sablé. Our current collection includes Blanc de Blancs and Rosé.
Méthode Sablé is our proprietary method for creating Cuvée Sablé. Rather than removing alcohol from wine, it builds every cuvée from first principles using carefully selected ingredients transformed through precise fermentation, extraction, distillation, blending and carbonation.
Because we were never trying to recreate wine. From the outset, our ambition was to create an entirely new category of fine 0.0% sparkling cuvées. Rather than producing wine and removing alcohol, we chose to compose every cuvée from first principles through Méthode Sablé. It is a philosophy of creation rather than correction.
Yes. Sablière contains 0.0% ABV. It is composed without fermentation to alcohol and contains no alcohol at any stage of production.
Sablière is composed in the style of fine sparkling: structured, aromatic and dry. The cuvées draw on the sensory architecture associated with classic Blanc de Blancs and Rosé sparkling styles, with layered aromatics, tension on the palate and a clean finish.
No. Sablière is composed for balance and freshness with a dry finish. The intention is depth and length rather than sweetness.
Sablière Rosé derives its hue entirely from its ingredients - verjuice, apples, tea and honey distillate. No artificial colourings are added at any stage. The result is a naturally deeper, more nuanced tone, reflecting the structure and style of fine rosé sparkling rather than confectionery pink.

Serve well chilled, ideally between 8-10°C. Sablière is best enjoyed from a champagne wine glass or a flute, allowing aromatics and texture to fully open.
Once opened, Sablière will keep for up to 2-3 days if refrigerated and sealed with a sparkling wine stopper.

Our cuvées are composed from carefully selected ingredients sourced from distinct origins – tea from high-altitude estates in Nepal, apples from orchards in Kent, verjus from vineyards in Sussex, and honey from Scotland.
Each ingredient is chosen for both its structural role in the cuvée and the conditions in which it is grown.
Sablière should be stored in a cool, dry place away from direct sunlight.
Unopened, Sablière will remain stable for up to 12 months when stored correctly in a cool, dry place away from direct sunlight.
Orders for UK mainland are typically take 2-3 days. Delivery to remote locations may take up to 5 working days.
UK delivery is £5. Delivery to Northern Ireland is £10. Complimentary UK delivery is available on orders over £100.
If your order arrives damaged or incorrect, please contact us within 48 hours of delivery and we will resolve the issue promptly.
