Ingredients: Tea infusion, Scottish spring water, fermented apple, verjuice, strawberry juice from concentrate, honey essence, strawberry extract, acidity regulator (tartaric acid), carbon dioxide.

Additional information: Contains naturally occurring caffeine from tea.

Serve

Serve well chilled, between 8-10°C, in a fine sparkling wine glass.

Appearance

A pale blush with a soft golden glow and a delicate mousse.

Aromatics

Rose petal and wild strawberry lift from the glass, followed by blood orange, quince and a fine wisp of smoke. With air, the nose deepens into dried blossom, heather honey and gentle spice.

Palate

Textural and poised, with soft red berries and a gentle creaminess that draws across the palate. Floral notes and subtle spice unfold through the centre, while a quiet thread of smoke and a fine mineral line carry into a long, dry, finely etched finish.

Pairing

Aged Comté or Ossau-Iraty, roast poultry and charred vegetables. Also elegant with red berries.

Opening Ritual

Considered in every detail

Each Sablière cuvée arrives quietly composed, considered in every detail. The outer packaging is formed from reused board, bearing the imprints of bottles it previously carried. Light weight, dark amber glass protects the cuvée’s aromatics. The House motto is embossed discreetly in the foil, and the muselet and cork bears the House mark. Nothing surrounding the cuvée is incidental. It forms part of the ritual: thoughtful, restrained, and made to endure.
